Coarse smoking wood for long smoking sessions
FTM smoking wood chips are coarsely chopped smoking wood that has been specially developed for long smoking sessions and the preparation of larger fish. It is particularly suitable for extended smoking times where an intense, deep smoke aroma is desired and the smoke should have an even effect over many hours.

Slow embers and intense aroma
Due to its coarse structure, the smoking wood glows much more slowly than fine smoking flour, ensuring long-lasting, constant smoke development. This property enables gentle smoking, in which even strong or thick-fleshed fish are evenly smoked without drying out. The resulting smoke aroma is strong and full-bodied, yet remains balanced and clean. Fish species that are particularly rich in fat benefit from this intense smoking process, as their own flavour is emphasised rather than masked.

Versatile use in smoke ovens and smokers
Smoking chips are preferred in larger smoke ovens, smokers or when barbecuing, when long burning times are required. They can be used on their own or combined with finer smoking flour to adjust the smoke intensity and smouldering time to the respective smoking process.
