Finely balanced marinade mixture
FTM Gravad Lax Exquisit is a high-quality spice and salt mixture for preparing gravad lax and salmon trout fillets. In addition to the classic ingredients, it contains additional, finely balanced spices that give the fish a particularly well-rounded and complex flavour. The mixture is aimed at connoisseurs who appreciate sophisticated seasoning and a harmonious taste.
Recipe and flavour profile
The Exquisite blend combines salt and sugar with selected spices, so that the fish is gently salt-cooked and evenly flavoured. The result is a tender gravad lax with a fine texture, in which the natural flavour of salmon and salmon trout is clearly preserved and subtly complemented by the spice composition. The recipe is particularly suitable for larger, high-quality fillets that are served as starters, on cold platters, at buffets or as a sophisticated sandwich filling. Both fish caught by the user and purchased salmon sides can be refined with little effort.
Preparation and maturing
Approximately 80 g of spice mixture per kilogram of fillet is used for preparation. The fillet is evenly covered with the mixture and stored in the refrigerator at around 4 °C for about three days for salt curing, turning it once a day. Alternatively, the fillet can be vacuum-packed, which is particularly practical if space in the refrigerator is limited. After the maturing period, the fish is patted dry and cut into thin slices. When kept refrigerated at a constant temperature of at least 4 °C, the finished gravad lax can be stored for up to ten days and offers consistently high quality during this period.
